Chocolate cake with mint frosting

Ingredients
1 Cup Water
⅓ Cup Vegetable Oil
3 Large Eggs

Pan Size / Bake Time
2 8": 26-31 minutes
2 9": 24-29 minutes
13" x 9": 26-31 minutes
Bundt®: 33-36 minutes
24 Cupcakes: 18-21 minutes

Baking Instructions
1. PREHEAT oven to 350°F for metal or glass pans, 325°F for dark or coated pans. GREASE sides and bottom of each pan with shortening or oil spray. FLOUR lightly. (Use baking cups for cupcakes.)
2. BLEND cake mix, water, oil and eggs in a large bowl at low speed until moistened (about 30 seconds). BEAT at medium speed for 2 minutes. POUR batter in pans and bake immediately.
3. BAKE following chart below. Add 3-5 minutes to bake time for dark or coated pans. Cake is done when toothpick inserted in center comes out clean. COOL in pan on wire rack for 15 minutes. Cool completely before frosting.

Mint Buttercream frosting
1 cup salted butter, softened
1½ teaspoons vanilla
4 cups powdered sugar
3-4 tablespoons milk
2. 1\4 tsp of mint flavoring
Instructions
In a stand mixer bowl, with the mixer on medium speed, whip the butter for 2-3 minutes until it is almost white in color. Add in the powdered sugar, vanilla and 3 tablespoons milk. Beat on low speed for 3-5 minutes, adding in the last tablespoon of milk if the buttercream needs to be thinner.

Spring Funfetti Cupcakes

ingredients
1. Spring funfetti cake mix
2. 3 Eggs
3. 1\2 Cup of Oil
4. 1 Cup of Water
5. Spring Funfetti Vanilla Frosting

Steps
1. Set oven to 350°F.  For Cupcakes,use baking cups
2. Combine cake mix, water,oil,and eggs in large bowl; mix until moistened. Beat with mixer on medium speed for 2 minutes. Pour batter into cupcake pans
3. Bake at 350°F for 10 to 12 minutes for mini cupcakes and 19 to 23 for regular size
5. Frost the cupcakes

Cake Pops



Ingredients
1 box (about 18 ounces) Favorite cake mix
1/2 cup Icing
1 bag (14 ounces) Candy Melts® Easy-Add Candy Melts®
Makes
48 Tablespoons

Tools
9 x 13 in. Baking Pan
Cake Pops Sticks (found at Walmart or Michaels )

step 1
Preheat oven to 350°F. Spray one 13 x 9 x 2 in. sheet pan or two 8 in. or 9 in. round pans with vegetable pan spray.

In large bowl, combine cake mix, ; beat at medium speed with electric mixer 2 minutes. Pour into prepared pan.

Bake 30-35 minutes for round pans; 35-40 minutes for sheet pan, or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan to cooling grid and cool completely. Divide cake in half; freeze one half for future use.

In large bowl, use hands to crumble cake until no large chunks remain. Add icing; mix with fingers until well combined. Form mixture into cake balls. Chill in refrigerator at least 2 hours. Melt Candy Melts according to package directions. Dip sticks into melted Candy Melts and insert into cake balls; let set. Wait until candy is completely firm before dipping the pops completely in melted Candy Melts.

Makes 24 - 2 tablespoon sized cake ball pops (each about 1-1/2 in. diameter)
Makes 16 - 3 tablespoon sized cake ball pops (each about 1-3/4 in. diameter)
